Gary is the author of many books, including <em>Coming Home to Eat: The Sensual Pleasures and Global Politics of Local Foods<\/em><span style=\"font-size: 0.8em\">.<\/span><\/p>\n<p><em><span style=\"font-size: 1.2em\">A Terroir-ists Manifesto For Eating in Place:<br \/>\nRenewing America&#8217;s Food Traditions<\/span><\/em><\/p>\n<p>Know where your food has come from<br \/>\nthrough knowing those who produced it for you,<br \/>\nfrom farmer to forager, rancher or fisher<br \/>\nto earthworms building a deeper, richer soil,<br \/>\nto the heirloom vegetable, the nitrogen-fixing legume,<br \/>\nthe pollinator, the heritage breed of livestock,<br \/>\nand the sourdough culture rising in your flour.<\/p>\n<p>Know where your food has come from<br \/>\nby the very way it tastes:<br \/>\nits freshness telling you<br \/>\nhow far it may have traveled,<br \/>\nthe hint of mint in the cheese<br \/>\nsuggesting what the goat has eaten,<br \/>\nthe terroir of the wine<br \/>\nreminding you of the lime<br \/>\nin the stone you stand upon,<br \/>\nso that you can stand up for the land<br \/>\nthat has offered it to you.<\/p>\n<p>Know where your food has come from<br \/>\nby ascertaining the health &amp; wealth<br \/>\nof those who picked &amp; processed it,<br \/>\nby the fertility of the soil that is left<br \/>\nin the patch where it once grew,<br \/>\nby the traces of pesticides<br \/>\nfound in the birds &amp; the bees there.<br \/>\nKnow whether the bays &amp; shoals<br \/>\nwhere your shrimp &amp; fish once swam<br \/>\nwere left richer or poorer than before<br \/>\nyou &amp; your kin ate from them.<\/p>\n<p>Know where your food comes from<br \/>\nby the richness of stories told around the table<br \/>\nrecalling all that was harvested nearby<br \/>\nduring the years that came before you,<br \/>\nwhen your predecessors &amp; ancestors,<br \/>\nroamed the same woods &amp; neighborhoods<br \/>\nwhere you &amp; yours now roam<br \/>\nKnow them by the songs sung to praise them,<br \/>\nby the handmade tools kept to harvest them,<br \/>\nby the rites &amp; feasts held to celebrate them,<br \/>\nby the laughter let loose to show them our affection.<\/p>\n<p>Know where your foods come from<br \/>\nby the patience displayed while putting them up,<br \/>\nwhile peeling, skinning, coring or gutting them,<br \/>\nwhile pit-roasting, poaching or fermenting them,<br \/>\nwhile canning, salting or smoking them,<br \/>\nwhile arranging them on a plate for our eyes to behold.<br \/>\nKnow where your food comes from<br \/>\nby the slow savoring of each and every morsel,<br \/>\nby letting their fragrances lodge in your memory<br \/>\nreminding you of just exactly where you were<br \/>\nthe very day that you became blessed<br \/>\nby each of their distinctive flavors.<\/p>\n<p>When you know where your food comes from<br \/>\nyou can give something back to those lands &amp; waters,<br \/>\nthat rural culture, that migrant harvester,<br \/>\ncurer, smoker, poacher, roaster or vinyer.<br \/>\nYou can give something back to that soil,<br \/>\nsomething fecund &amp; fleeting like compost<br \/>\nor something lasting &amp; legal like protection.<br \/>\nWe, as humans, have not been given<br \/>\nroots as obvious as those of plants.<br \/>\nThe surest way we have to lodge ourselves<br \/>\nwithin this blessed earth is by knowing<br \/>\nwhere our food comes from.<\/p>\n<p>~ Gary Paul Nabhan, January 2007<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ll have the great fortune of spending a week this summer with Gary Nabhan, Director of the Center for Sustainable Environments, and wanted to share his manifesto for eating with you.
