{"id":128,"date":"2012-05-10T06:00:00","date_gmt":"2012-05-10T06:00:00","guid":{"rendered":""},"modified":"2012-05-10T06:00:00","modified_gmt":"2012-05-10T06:00:00","slug":"whats-table-growing-and-cooking-louisville","status":"publish","type":"post","link":"https:\/\/centernet.pcusa.org\/food-faith\/whats-table-growing-and-cooking-louisville\/","title":{"rendered":"What&#8217;s on the Table: Growing and Cooking in Louisville"},"content":{"rendered":"<h2 class='post__subtitle' >Radishes Everywhere!<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"float: left; border-image: initial;\" src=\"\/wp-content\/uploads\/sites\/12\/unknown_medium300.jpeg\" alt=\"radish in the ground\" width=\"145\" height=\"151\" \/>The radish is an easily recognizable and common garden crop. &nbsp;It is a member of the brassica family, which includes other veggies like turnips, cauliflower, mustard and kale. &nbsp;I like to think of radishes as cabbage&rsquo;s crunchier cousin or broccoli&rsquo;s baby brother.&nbsp; They are, for the most part, a cold weather crop which means they are best grown late March-June and then also in October-January here in Kentucky. &nbsp;They aren&#8217;t too fond of the hot summer sun, so much like myself they are most productive in the spring and then the fall. &nbsp;<span>Some varieties of radishes can grow from seed to small plant in just a few days. &nbsp;<\/span><\/p>\n<p><span><span>From the health and nutrition perspective, r<span>adishes are known to be low in Saturated Fat, and very low in Cholesterol. &nbsp;T<\/span>hey are a good source of Vitamin B6, <span>Riboflavin,&nbsp;<\/span>Calcium, Magnesium, Copper and Manganese, and an even better source of Dietary Fiber, Vitamin C, Folate and Potassium.<\/span><span><br \/><\/span><\/span><\/p>\n<p>Although I have never found an individual who loves radishes like I do, I&rsquo;ve never known someone to turn one down after pulling it straight from the ground.&nbsp; They are crisp, spicy, juicy and most important edible from the greens to the root. &nbsp;<span>And they are undoubtedly one of my favorite veggies to eat and share.&nbsp;<\/span><\/p>\n<p>As I was tending my garden the other evening, it became abundantly clear that my favorite time of year was at hand.&nbsp; As I carefully pulled the shoots of grass which had begun crowding around some of my sprouting veggies, I saw that my first round of radishes were ready for harvest.&nbsp;&nbsp; I pulled them out of the ground in utter ecstasy and hurried (with a radish in my mouth) home to prepare my bounty. &nbsp;Here&rsquo;s what I whipped up:<\/p>\n<p><strong>Radish mashed potatoes<\/strong><\/p>\n<p><em>2-3 large red potatoes<\/em><\/p>\n<p><em>3-4 garden fresh radishes<\/em><\/p>\n<p><em>Greens from radishes<\/em><\/p>\n<p><em>3 cloves minced garlic<\/em><\/p>\n<p><em>&frac12; c. soymilk<\/em><\/p>\n<p><em>1 tbsp. butter<\/em><\/p>\n<p><em>Salt to taste<\/em><\/p>\n<p>Trim the radishes (save the greens for garnish), chop potatoes and place in boiling water, uncovered for about 10-15 minutes.&nbsp; Drain the water from the pan, add soymilk and butter and mash to your heart&rsquo;s delight.&nbsp; Add salt and additional season depending on your preference.&nbsp; Then chop the greens from the radish and fold into the potatoes.<\/p>\n<p>&nbsp;<img loading=\"lazy\" decoding=\"async\" style=\"float: left;\" src=\"\/wp-content\/uploads\/sites\/12\/unknown-2_small200.jpeg\" alt=\"radish mashed potatoes\" width=\"200\" height=\"150\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;It&rsquo;s a spicy, mushy feast. &nbsp;<\/p>\n<p>If you have a gardening or cooking story you&#8217;d like to see on the Food &amp; Faith blog or questions about what&#8217;s growing in your garden, please email me at: <a href=\"http:\/\/mce_host\/verleen\/blog\/post\/21663\/mail%20to:arianna.king@pcusa.org\">arianna.king@pcusa.org<\/a> or call (502) 569-5818. &nbsp;<span>Happy harvesting to all!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The radish is an easily recognizable and common garden crop. &nbsp;It is a member of the brassica family, which includes other veggies like turnips, cauliflower, mustard and kale. &nbsp;I like to think of radishes as cabbage&rsquo;s crunchier cousin or broccoli&rsquo;s baby brother.&nbsp; <span><br \/><\/span><\/p>","protected":false},"author":46,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"ngg_post_thumbnail":0,"footnotes":""},"categories":[],"tags":[],"class_list":["post-128","post","type-post","status-publish","format-standard","hentry"],"yoast_head":"<!-- This site is optimized with the Yoast SEO Premium plugin v22.5 (Yoast SEO v23.5) -
