Salsa Gazpacho
This comes with high commendations from a participant in our recent Just Eating class. (She also taps her own maple trees and cooks down the sap for maple syrup.)
2 large tomatoes or more
2 tsp fresh lime juice
2 Tbspns minced red bell pepper
1/2 cup fresh cilantro, chopped
1/4 cup olive oil
1 tsp minced ginger
1-1/2 tsp minced garlic
1 tsp minced serrano pepper
1/4cup soy sauce or 1-1/2 tsp sea salt
Optional:
1/4 cup sundried tomatoes
1/2 tsp cumin
* Blend all in blender & enjoy with celery or chips
(Lasts 3 days in fridge)
